 SEPTEMBER BEER SPECIALS

Rogue Brutal Bitter 12oz.
Brutal Bitter is actually full-bodied, deeply flavored, intensely hoppy brew. There is nothing brutal about the rich, deep, mellow taste. It's crackling but not sharp... This beer may raise eyebrows, but it won't pucker lips. The aftertaste is clean.
 
Rogue American Amber 12oz.
At Tawny amber in color with a coffee aroma and tight head. A delicate roasted malt accent, generous use of hops and a smooth finish. American Amber, originally known as Ashland Amber, (created at Rogue's original brewpub in Ashland, Oregon which was destroyed by flooding several years ago), is created from Northwest Harrington and Klages, 95-115and 135-165 Crystal Malts. Kent Golding and Cascade Hops.
 
Rouge Chipotle Ale 22 oz.
Chipotle Ale is basd on Rogues's Oregon Golden Ale, but delicately spiced with smoked chipotle chile peppers. Deep golden in color with a tight head, rich malty aroma, delicately smooth and crisp flavor, and subtle chipotle chile finish. Formerly known and packaged as Mexicali Rogue, Chipotle Ale is created from Northwest Harrington, Klages, and Maier Munich Malts; Williamette and Cascade hops; and Smoked Jalapeno (Chipotle) Peppers.
 
Rogue Uber Pilsner 22 oz.
A German style Pilsner, pale gold in color, medium bodied with a malty aroma and a crisp hop bitterness (100% Sterling hops). Uber Pils is brewed with three Great Western and two Weyermann malts, Czech Pils Yeast and Free Range Coastal Waters.
 

THE WOLF CREEK BREWING PROCESS


HERE AT WOLF CREEK, BREWING IS AN EIGHT STEP PROCESS THAT TAKES BETWEEN THREE AND FOUR WEEKS. WE USE ONLY THE FINEST INGREDIENTS AND TAKE THE UTMOST CARE IN BREWING OUR FINE ALES. HERE’S HOW IT WORKS...

1. MILLING: PALE BARLEY MALT ALONG WITH OTHER SPECIALTY MALTS IS GROUND IN THE MALT MILL. THE GRAINS ARE TRANSFERRED THOUGH A LONG TUBE (THE FLEX AUGER) INTO THE COPPER MASH TUN.

2. MASHING: ONCE IN THE MASH-TUN, HOT WATER IS ADDED TO THE GRAINS, CREATING THE “MASH”. STEAM HEATING ALLOWS THE BREWER TO CONTROL THE TEMPERATURE OF THE MASH WHILE IT MIXES, CONVERTING THE GRAIN TO SUGARS.

3. SPARGING: ONCE THE DESIRED BODY IS ACHIEVED, THE BREWER RINSES, OR “SPARGES” THE GRAIN. NOW CALLED “WORT”, THE LIQUID IS SEPARATED FROM THE GRAIN AND TRANSFERRED INTO THE COPPER BREW KETTLE.

4. BOILING: THE WORT IS BOILED FOR ABOUT 90 MINUTES, DURING WHICH TIME THE BREWER ADDS THE HOPS. THE BOILING STERILIZES THE WORT AND CAUSES THE HOPS TO RELEASE OILS WHICH GIVE FLAVOR AND AROMA TO THE BEER.

5. COOLING: NEXT, A WHIRPOOL IS CREATED WHICH HELPS SETTLE ANY SOLIDS TO THE BOTTOM OF THE KETTLE WHERE THEY CAN BE REMOVED. NOW THE HOPPED WORT IS PUMPED THROUGH THE “HEAT EXCHANGER” WHICH COOLS THE WORT FROM BOILING DOWN TO ABOUT 70 DEGREES.

6. FERMENTATION: THE COOLED, HOPPED WORT IS THEN TRANSFERRED TO A FERMENTATION TANK (THE ONES ALONG THE BACK WALL OF THE BREWERY). THE YEAST IS THEN ADDED, WHICH METABOLIZES THE SUGAR IN THE WORT AND PRODUCES ALCOHOL AND CARBON DIOXIDE. THIS TAKES ABOUT 5 DAYS.

7. AGING: ONCE THE YEAST HAS CONSUMED MOST OF THE SUGARS, THE TEMPERATURE IS LOWERED, THE YEAST IS REMOVED AND THEN THE CONDITIONING, OR AGING OF THE BEER CAN BEGIN (A MINIMUM OF 2 WEEKS).

8. FILTERING: AFTER THE BEER HAS AGED IT IS FILTERED AND TRANSFERRED TO A SERVING TANK (THE ONES BEHIND THE BAR). ONCE IT IS TRANSFERRED TO THE SERVING VESSEL, THE BEER IS CARBONATED TO THE PROPER LEVEL AND IS READY TO BE SERVED DIRECTLY FROM THE TANKS TO THE TAP TOWERS. THIS IS AS FRESH AS IT GETS. CHEERS!!!

GOLDEN EAGLE ALE


4.5% ALCOHOL
A mellow, balanced ale that’s golden in color, lightly hopped which produces mild bitterness. A great “starter ale” for anyone new to craft-brewed beers. Still has more flavor than the mass-produced beers. Multi award winning ale in the blonde ale category. Hops: U.S. Northern Brewer and Cascade.  Silver Award at the 2003 California State Fair.

INTIMIDATOR #3 IPA


6.7% ALCOHOL
A balanced  India Pale Ale brewed with massive quantities of malt & hopped with warrior and centennial. Bronze Award at the 2004 LA County Fair for American Style I.P.A.'s. Great with hearty or spicy foods.

HOWLIN’ HEFEWEIZEN


4.5% ALCOHOL
A German style Hefeweizen (wheat ale with yeast) that has a very unique banana-clove-apricot flavor from the authentic Bavarian yeast. This wheat beer is unfiltered which gives it a cloudy golden color. A very refreshing warm weather beer. Multi award winning beer in the German Wheat Ale / Bavarian hefeweizen category. First  place at the 2001 California State Fair.
Hops: German Hallertau and Saaz. Won Second Place at the L.A. County Fair.

KODIAK RED ALE


6.4% ALCOHOL
Five different malts make this a big, hearty ale that starts with a complex malty sweetness and is balanced by medium hop bitterness. A British strong, or old ale in style that’s deep red in color.  Award winning ale.
Hops: U.S. Northern Brewer and Liberty.

LONE WOLF RED ALE

Our "West Coast" style Red Ale brewed with caramel and honey malts, then hopped with Cascades for big flavor. This is a balanced yet aggressive Red Ale for people who hate bland.

DESPERADO INDIA PALE ALE

7.0% ALCOHOL
Our India Pale Ale is brewed with Amarillo hops which gives it a citrus grapefruit flavor & aroma.  This is a very full flavored I.P.A. that is on the bitter side but still balanced by the malt flavors.

AMERICAN EAGLE ALE

6.0% ALCOHOL

This copper-colored ale is an American version of an E.S.B. (British Extra Special Bitter) that uses Maris Otter British malt and American glacier hope. This E.S.B. is a balanced ale between the malty sweetness and the bitterness from the hops.  Glacier hops give this ale a nice floral aroma. Copper in color.|

FULL MOON STOUT


6.1% ALCOHOL
This is an Oatmeal Stout that’s a very rich, full flavored stout. Roasted, caramel malt, and chocolate flavors. Bitterness is a moderate. Our darkest ale that’s dark brown, almost black in color. Brewed with oatmeal which gives it its’ smoothness.
 

 

YELLOWSTONE WOLF PALE ALE


6.2% ALCOHOL
Brewed in honor of the grey wolves release back into Yellowstone National Park.  A big pale ale with medium maltiness combined with three additions of cascade hops in the kettle plus dry hopped with Cascade hops in the aging tank. Yellowstone Wolf Pale Ale is balanced but on the bitter side. Light copper in color. Hops: Cascade. Award winning ale.
 
 

PLAINS BISON BROWN ALE


6.2% ALCOHOL
A malty Brown Ale that has a roasted, nutty flavor.  Balanced by medium hop.  Bitterness.  This is an American-style brown ale. Deep red-brown in color.
 

BALD EAGLE E.S.B. (EXTRA SPECIAL BITTER)


6.0% ALCOHOL
A British style E.S.B. that’s malty, with a unique fruitiness in the flavor.
Moderate hop flavor and bitterness from British hops. Copper/amber in color.
 

GRIZZLY BEAR PORTER


6.4% ALCOHOL
A hearty Porter that has a roasted, chocolate, smoky malt flavor. Balanced by medium hop bitterness.  Full bodied and rich in flavor. There is some smoked malt used which gives a strong smoky flavor and aroma.  This Porter is unfiltered. Deep, dark, brown in color.
 

TIMBER WOLF AMBER ALE


5.7% ALCOHOL
An Amber-red Ale that combines caramel and honey malts with very intense hop flavors and hop bitterness. Medium bodied.  Like a Red I.P.A.  Amber-red in color.
 

WILD MUSTANG STRONG ALE


6.7% ALCOHOL
A strong Ale that combines big malt flavors with strong hop flavor, aroma, and bitterness. High in alcohol, this is a very strong ale that’s full bodied. Dark red in color.
 

WINTER WONDERLAND ALE


7.0% ALCOHOL
Our Holiday Ale that combines different spices with complex malt flavors and medium hop bitterness. Medium bodied. The spices can vary from year to year. Deep red in color. This is also a strong ale that’s referred to as a “Winter Warmer”.

BIG BAD WOLF I.P.A.

9.0% ALCOHOL
This India Pale Ale is a "Double I.P.A." that is brewed with over 1000 pounds of malt and is hopped with Warrior Hops for bittering, Centennial Hops for flavor, and Dry-Hopped with Amarillo Hops and Cascade Hops. This is a very strong I.P.A. with 9.0% alcohol by volume and 100 I.B.U.'s! (International Bittering Units)

BOBCAT BITTER ALE

4.7 % ALCOHOL
A British-style Ale that’s commonly served in British pubs.  Milder than our E.S.B., it is an easy drinking ale with a lower alcohol content than our E.S.B.
Copper in color with medium bitterness (even though it’s called “bitter” in England).
 

MAPLE BROWN ALE
 

6.0 % ALCOHOL
This Brown Ale is brewed with a lot of caramel malt, honey malt, and chocolate malt to give it a hearty maltiness.  A small amount of Tomahawk hops are added to balance the malt sweetness. We then add pure Vermont maple syrup
and whole cinnamon sticks to give it a holiday flavor. Deep red-brown in color.
 

WHEREWOLF ALE

6.2% ALCOHOL
This Pale Ale is brewed with a hefty does of malt but it's the Centennial hops that give this Pale Ale massive citrus hop flavor. We also dry-hop this Pale Ale with Simcoe hops that give a pine-citrus aroma. This Pale Ale is for hop lovers. Copper-amber in color.
